  • 1 1/4 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup melted butter
  • 1/2 teaspoon apple cider vinegar
  • 1 frozen, deep-dish pie crust (9 inches)
  • 3 cups sliced rhubarb
  • 3 cups quartered strawberries
  • 1/3 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon orange juice
  • 1/2 teaspoon vanilla extract


Instructions

  1. Combine flour, brown sugar, nutmeg, and melted butter in a medium bowl.
  2. Mix until crumbly, then set aside.
  3. Preheat the oven to 425°F (220°C).
  4. Stir together the sliced rhubarb, quartered strawberries, brown sugar, granulated sugar, cornstarch, salt, orange juice, and vanilla extract in a large bowl; allow to sit for 10 minutes.
  5. Pour the filling into the frozen pie crust, spreading it evenly.
  6. Top the filling with the crumb mixture until covered.
  7. Bake for 40-45 minutes, or until bubbly and golden.
  8. Let cool for at least 30 minutes before serving.

Notes

For a lighter option, substitute half the butter with unsweetened applesauce.
