A delightful dessert that marries the sweetness of strawberries with the tartness of rhubarb, topped with a crumbly mixture.
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup brown sugar
- 1/4 teaspoon ground nutmeg
- 1/2 cup melted butter
- 1/2 teaspoon apple cider vinegar
- 1 frozen, deep-dish pie crust (9 inches)
- 3 cups sliced rhubarb
- 3 cups quartered strawberries
- 1/3 cup packed light brown sugar
- 1/3 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 tablespoon orange juice
- 1/2 teaspoon vanilla extract
Instructions
- Combine flour, brown sugar, nutmeg, and melted butter in a medium bowl.
- Mix until crumbly, then set aside.
- Preheat the oven to 425°F (220°C).
- Stir together the sliced rhubarb, quartered strawberries, brown sugar, granulated sugar, cornstarch, salt, orange juice, and vanilla extract in a large bowl; allow to sit for 10 minutes.
- Pour the filling into the frozen pie crust, spreading it evenly.
- Top the filling with the crumb mixture until covered.
- Bake for 40-45 minutes, or until bubbly and golden.
- Let cool for at least 30 minutes before serving.
Notes
For a lighter option, substitute half the butter with unsweetened applesauce.
