Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 can (20 oz) crushed pineapple, drained
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cream the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and drained crushed pineapple until fully combined.
  5. Whisk together the flour, baking soda, baking powder, and a pinch of salt in a separate bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool completely before frosting.
  10. Mix together cream cheese, softened butter, powdered sugar, and a bit of crushed pineapple until smooth for the frosting. Spread it over the cooled cake, and enjoy!

Notes

For a lighter option, substitute unsweetened applesauce for butter or use gluten-free flour if needed. Let the cake sit for a few hours before serving to enhance flavors.
