Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 can (20 oz) crushed pineapple, drained
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract and drained crushed pineapple until fully combined.
- Whisk together the flour, baking soda, baking powder, and a pinch of salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before frosting.
- Mix together cream cheese, softened butter, powdered sugar, and a bit of crushed pineapple until smooth for the frosting. Spread it over the cooled cake, and enjoy!
Notes
For a lighter option, substitute unsweetened applesauce for butter or use gluten-free flour if needed. Let the cake sit for a few hours before serving to enhance flavors.
