This simple recipe transforms chicken breasts into a tender and savory meal using just four ingredients.
Ingredients
- 2 large boneless skinless chicken breasts (about 1 1/2 pounds total)
- 2/3 cup mayonnaise
- 1/2 cup finely grated Parmesan cheese (about 2 oz.)
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Chopped fresh parsley, for garnish (optional)
Instructions
- Preheat the oven to 375°F.
- In a small bowl, combine the mayonnaise, grated Parmesan cheese, and garlic powder. Mix until well combined.
- Cut the chicken breasts in half horizontally to create thinner cutlets. Pat the chicken dry with paper towels. Season both sides with kosher salt and freshly ground black pepper.
- Place the chicken in a 9×13-inch baking dish. Spread the mayonnaise mixture evenly over the chicken. Bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F.
- Set the oven to broil. Broil the chicken for 2-3 minutes, or until the topping is golden brown and crispy.
- Remove the chicken from the oven and garnish with chopped parsley, if desired. Serve with your favorite side dishes.
Notes
If you don’t have a broiler, bake the chicken at 375°F until golden brown for about 25-30 minutes.
