Description

A delicious and hearty vegetable lasagna packed with fresh veggies and ricotta cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set aside.
  3. Sauté the onion, garlic, zucchini, and bell pepper in a skillet until softened.
  4. Mix the sautéed vegetables with the ricotta cheese and spinach in a bowl.
  5. Spread a layer of marinara sauce in a baking dish.
  6. Add three lasagna noodles, followed by half of the ricotta mixture, a layer of mozzarella, and another layer of sauce.
  7. Repeat these layers one more time, finishing with noodles and sauce on top.
  8. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  9. Bake in the preheated oven for 45 minutes.
  10. Let it rest for 10 minutes before slicing and serving.
