Description
A delicious and hearty vegetable lasagna packed with fresh veggies and ricotta cheese.
Ingredients
- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, chopped
- 2 cups marinara sauce
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions and set aside.
- Sauté the onion, garlic, zucchini, and bell pepper in a skillet until softened.
- Mix the sautéed vegetables with the ricotta cheese and spinach in a bowl.
- Spread a layer of marinara sauce in a baking dish.
- Add three lasagna noodles, followed by half of the ricotta mixture, a layer of mozzarella, and another layer of sauce.
- Repeat these layers one more time, finishing with noodles and sauce on top.
- Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 45 minutes.
- Let it rest for 10 minutes before slicing and serving.
