Description
A rustic tart featuring juicy cherry tomatoes and melted cheese, all wrapped in a flaky crust.
Ingredients
- 1 pie crust (store-bought or homemade)
- 2 cups cherry tomatoes, halved
- 1 cup shredded cheese (mozzarella or goat cheese)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the pie crust on a floured surface and transfer it to a baking sheet.
- Toss the halved cherry tomatoes with olive oil, salt, and pepper in a mixing bowl until evenly coated.
- Spoon the tomato mixture into the center of the crust, leaving about 2 inches of space around the edges.
- Evenly sprinkle the shredded cheese over the tomatoes.
- Fold the edges of the crust over the filling, pleating it as you go.
- Bake for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
- Allow it to cool for a few minutes, garnish with fresh basil, and serve.
Notes
For a crisper texture, blind bake the crust for about 10 minutes first. Experiment with different cheese blends for added flavor.
