Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 cups cherry tomatoes, halved
  • 1 cup shredded cheese (mozzarella or goat cheese)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the pie crust on a floured surface and transfer it to a baking sheet.
  3. Toss the halved cherry tomatoes with olive oil, salt, and pepper in a mixing bowl until evenly coated.
  4. Spoon the tomato mixture into the center of the crust, leaving about 2 inches of space around the edges.
  5. Evenly sprinkle the shredded cheese over the tomatoes.
  6. Fold the edges of the crust over the filling, pleating it as you go.
  7. Bake for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
  8. Allow it to cool for a few minutes, garnish with fresh basil, and serve.

Notes

For a crisper texture, blind bake the crust for about 10 minutes first. Experiment with different cheese blends for added flavor.
