Cool down this summer with delicious watermelon popsicles, a simple and refreshing treat.
Ingredients
- 4 cups watermelon chunks
- 2 tablespoons lime juice
- 2 tablespoons honey or sugar (optional)
- Mint leaves (for garnish, optional)
Instructions
- Begin by cutting the watermelon into chunks.
- Place the chunks into a blender and blend until smooth.
- Add the lime juice and sweetener (if using) to the blended watermelon. Blend again until well combined.
- Pour the mixture into popsicle molds.
- Insert sticks into the molds and freeze for at least 240-360 minutes, or until completely firm.
- Run the molds under warm water for a few seconds to help release the popsicles.
- Garnish with mint leaves if desired and serve!
Notes
For a creamier texture, blend in a splash of coconut milk or add spinach/kale for nutrients without altering the taste.
