Ingredients

  • 4 cups watermelon chunks
  • 2 tablespoons lime juice
  • 2 tablespoons honey or sugar (optional)
  • Mint leaves (for garnish, optional)


Instructions

  1. Begin by cutting the watermelon into chunks.
  2. Place the chunks into a blender and blend until smooth.
  3. Add the lime juice and sweetener (if using) to the blended watermelon. Blend again until well combined.
  4. Pour the mixture into popsicle molds.
  5. Insert sticks into the molds and freeze for at least 240-360 minutes, or until completely firm.
  6. Run the molds under warm water for a few seconds to help release the popsicles.
  7. Garnish with mint leaves if desired and serve!

Notes

For a creamier texture, blend in a splash of coconut milk or add spinach/kale for nutrients without altering the taste.
