Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet (1 oz) taco seasoning
  • 2/3 cup water
  • 1 can (15 oz) chili beans, undrained
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), undrained
  • 2 cups shredded cheddar cheese
  • 2 cups crushed Doritos or corn chips (Fritos)
  • 1 cup sour cream (optional)
  • 1 cup shredded lettuce (optional)
  • 1 diced tomato (optional)
  • Chopped green onions or cilantro (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef with the diced onion in a skillet over medium heat until the meat is cooked through.
  3. Add the taco seasoning and water, cooking for about 2-3 minutes until thickened.
  4. Mix in the chili beans and Rotel, simmering for another 2-3 minutes.
  5. Layer half of the crushed chips in a baking dish, pour the beef mixture over, and sprinkle with cheese.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Top with remaining crushed chips and any desired toppings before serving.

Notes

Feel free to substitute ground turkey for beef or use gluten-free chips if dietary needs require.
