A delightful dessert featuring caramelized fruit on top of a warm, buttery cake base.
Ingredients
- 2 cups sliced fruit (pineapple, apples, or berries)
- 1 cup brown sugar
- 1/2 cup butter
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 3 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a saucepan, and once melted, stir in the brown sugar until fully dissolved.
- Pour this mixture into a greased round cake pan.
- Arrange your sliced fruit evenly over the caramel sauce.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, combine the milk, eggs, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter over the fruit, gently smoothing the top if necessary.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for about 10 minutes before inverting it onto a serving plate.
Notes
Serve warm, optionally dusted with powdered sugar or paired with vanilla ice cream.
