Ingredients
- 1 pound of fresh asparagus
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of sea salt (or to taste)
- ½ teaspoon of freshly cracked black pepper
- Zest of 1 lemon
- Optional: Parmesan cheese, balsamic reduction, or toasted nuts for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Trim the asparagus by snapping off the woody ends, typically about 1-2 inches from the bottom.
- In a bowl, toss the asparagus with olive oil, sea salt, and pepper until well coated.
- Spread the coated asparagus on a baking sheet in a single layer for even cooking.
- Roast in the oven for 12-15 minutes until tender and slightly crisp, checking after 10 minutes.
- Remove from the oven, and while hot, sprinkle with lemon zest and any optional garnishes.
Notes
For an extra flavor burst, substitute olive oil with avocado oil or sprinkle with garlic powder.
