Description
This dish replicates Texas Roadhouse’s famous Smothered Chicken, featuring juicy grilled chicken breasts topped with sautéed mushrooms, onions, and melted Monterey Jack cheese.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup Italian dressing (for marinade)
- 1 sweet yellow onion, sliced
- 8 oz mushrooms, sliced
- 1 tbsp olive oil
- 1 cup Monterey Jack cheese, grated
- Salt and pepper, to taste
Instructions
- Marinate the chicken by placing the chicken breasts in a zipper freezer bag and pouring the Italian dressing over them. Seal the bag and refrigerate for at least 30 minutes.
- Preheat the grill to 350°F (medium heat). Place the chicken on the grill and cook for 5-8 minutes per side. Stir the onions and mushrooms in olive oil and add them to the grill pan.
- After the chicken is golden and cooked through (165°F internal temperature), remove the chicken and set it aside.
- Sauté the onions and mushrooms on the grill for 10-15 minutes, until softened and slightly caramelized.
- Place the chicken back on the grill or in a grill-safe pan. Top each breast with the sautéed onions and mushrooms, followed by a sprinkle of grated Monterey Jack cheese.
- Lower the grill heat to 300°F, close the lid, and let the cheese melt for 2-3 minutes. Remove from the grill and allow the chicken to rest for a few minutes before serving.
