Ingredients
- 3–4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup sour cream
- 1 cup shredded Jack cheese
- Chopped green onions, for garnish
- Paprika, for garnish
Instructions
- Preheat your oven to 375°F (190°C). Pat chicken breasts dry with paper towels and season with olive oil, salt, and pepper.
- In a hot skillet, sear the chicken undisturbed for about 5 minutes on each side until golden brown.
- Reduce heat and add minced garlic, cooking for about 30 seconds until fragrant.
- Pour in chicken broth and scrape browned bits from the pan to deglaze.
- Stir in sour cream and let the mixture simmer for about 5 minutes until slightly thickened.
- Transfer chicken to a baking dish, top with sauce and shredded cheese, and bake for about 15 minutes until cheese is melted.
- Garnish with green onions and paprika before serving.
Notes
For extra flavor, consider adding a splash of white wine after sautéing garlic. Let it reduce before adding the broth.
