A sweet and savory twist on classic meatloaf, enhanced with a homemade teriyaki glaze that brings umami-rich flavors to your dinner table.
Ingredients
- ¾ cup light soy sauce
- ¾ cup white sugar
- 1½ teaspoons ground ginger
- 1 teaspoon fresh ground black pepper
- 2 lbs lean ground beef (85/15)
- 1 small white onion, finely chopped
- 4 slices bread, torn into small pieces
- 3 large eggs
- ¾ cup milk (whole or 2%)
- 3 cloves garlic, minced
Instructions
- Preheat your oven to 350°F and place a large baking sheet under your loaf pan.
- In a bowl, whisk together soy sauce, sugar, ground ginger, and black pepper until the sugar dissolves. Set aside a third for glazing.
- In a large bowl, combine ground beef, onion, bread pieces, eggs, milk, and minced garlic. Mix in two-thirds of the teriyaki sauce until well incorporated.
- Press the mixture into a greased loaf pan or shape into a freestanding loaf in a baking dish. Brush with reserved teriyaki sauce.
- Bake for 1 to 1.5 hours until the internal temperature reaches 160°F.
- Let the meatloaf rest for 5-10 minutes before slicing.
Notes
This meatloaf pairs well with steamed rice and stir-fried vegetables. For better flavor, let it rest before slicing.
