Description

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 head of lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • Tortilla chips (optional)
  • Sour cream (optional)
  • Salsa (optional)


Instructions

  1. Cook the ground beef in a skillet over medium heat until browned. Drain off any excess fat.
  2. Stir in the taco seasoning along with water as per package instructions. Simmer until thickened.
  3. Mix the chopped lettuce, cherry tomatoes, black beans, corn, and diced avocado together in a large bowl.
  4. Top your salad with the seasoned ground beef and sprinkle with shredded cheese.
  5. Serve with tortilla chips, sour cream, and salsa if desired.
