Description

A quick and flavorful Taco Rice Bowl packed with seasoned meat, vibrant veggies, and creamy toppings on a bed of fluffy rice.


Ingredients

  • 1 cup rice
  • 1 lb ground chicken or beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • Sour cream (optional)
  • Salsa (optional)
  • Fresh cilantro for garnish


Instructions

  1. Cook the rice according to package instructions. Once done, set it aside.
  2. In a large skillet over medium heat, brown the ground chicken or beef until fully cooked. Drain any excess fat.
  3. Mix in the taco seasoning, black beans, corn, and diced tomatoes. Continue to cook for an additional 5-7 minutes, allowing the mixture to heat through.
  4. In serving bowls, layer a portion of the cooked rice, then add the taco meat mixture on top. Pile on shredded lettuce and cheese next.
  5. If desired, add a dollop of sour cream and a spoonful of salsa. Finish with a sprinkle of fresh cilantro for that extra touch.

Notes

Feel free to swap in brown rice for a healthier option or use ground turkey for a leaner meat choice.
