A quick and flavorful Taco Rice Bowl packed with seasoned meat, vibrant veggies, and creamy toppings on a bed of fluffy rice.
Ingredients
- 1 cup rice
- 1 lb ground chicken or beef
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese
- Sour cream (optional)
- Salsa (optional)
- Fresh cilantro for garnish
Instructions
- Cook the rice according to package instructions. Once done, set it aside.
- In a large skillet over medium heat, brown the ground chicken or beef until fully cooked. Drain any excess fat.
- Mix in the taco seasoning, black beans, corn, and diced tomatoes. Continue to cook for an additional 5-7 minutes, allowing the mixture to heat through.
- In serving bowls, layer a portion of the cooked rice, then add the taco meat mixture on top. Pile on shredded lettuce and cheese next.
- If desired, add a dollop of sour cream and a spoonful of salsa. Finish with a sprinkle of fresh cilantro for that extra touch.
Notes
Feel free to swap in brown rice for a healthier option or use ground turkey for a leaner meat choice.
