A Flavorful twist on classic favorites, combining the vibrant flavors of tacos with pasta for a hearty main course.


Ingredients

  • 8 oz pasta (shells or rotini)
  • 1 lb ground beef (or turkey)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup crushed Doritos
  • 1/2 cup ranch dressing
  • 1/4 cup taco seasoning
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. Brown the beef in a skillet over medium heat until nicely browned. Drain any excess fat and add taco seasoning.
  3. Combine the cooked pasta, seasoned beef, cherry tomatoes, corn, black beans, bell pepper, and cheese in a large bowl.
  4. Dress the salad with ranch dressing, tossing until well coated.
  5. Add the crushed Doritos for a delightful crunch.
  6. Season to taste with salt and pepper. Serve immediately or chill in the fridge.

Notes

For a vegetarian option, substitute the ground beef with sautéed mushrooms or crumbled tofu.
