Ingredients
- 8 oz pasta (shells or rotini)
- 1 lb ground beef (or turkey)
- 1 cup cherry tomatoes, halved
- 1 cup corn (canned or frozen)
- 1 cup black beans, rinsed and drained
- 1 bell pepper, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup crushed Doritos
- 1/2 cup ranch dressing
- 1/4 cup taco seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- Brown the beef in a skillet over medium heat until nicely browned. Drain any excess fat and add taco seasoning.
- Combine the cooked pasta, seasoned beef, cherry tomatoes, corn, black beans, bell pepper, and cheese in a large bowl.
- Dress the salad with ranch dressing, tossing until well coated.
- Add the crushed Doritos for a delightful crunch.
- Season to taste with salt and pepper. Serve immediately or chill in the fridge.
Notes
For a vegetarian option, substitute the ground beef with sautéed mushrooms or crumbled tofu.
