Ingredients
- 8 oz pasta (like fusilli or rotini)
- 1 cup cherry tomatoes, halved
- 1 cup black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 cup bell peppers, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1/2 cup taco dressing or ranch dressing
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta: Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and rinse with cold water to cool it down.
- Combine the ingredients: In a large bowl, mix the cooled pasta with cherry tomatoes, black beans, corn, diced bell peppers, shredded cheese, red onion, and cilantro.
