Description

A vibrant pasta salad filled with fresh vegetables and savory toppings, perfect for any occasion.


Ingredients

  • 1 lb. rotini (or your favorite pasta)
  • 1-2 cucumbers, diced
  • 2 tomatoes, diced
  • 2 stalks celery, chopped
  • 2 bell peppers, chopped (any color works)
  • 1 bunch of green onions, finely chopped
  • 2 small cans of sliced olives
  • 1/2 cup pepperoni, sliced in half
  • 1 cup cubed mozzarella or cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 12-16 oz. Italian dressing
  • 2-3 Tbsp. Salad Supreme (optional for extra flavor)


Instructions

  1. Start by cutting the vegetables into bite-sized pieces.
  2. Cook the pasta according to the package instructions. Once done, rinse it under cold water and drain well.
  3. In a large mixing bowl, combine the cooked pasta with the chopped vegetables.
  4. Add the olives, pepperoni, and cubed cheese to the bowl. Sprinkle in the grated Parmesan.
  5. Pour your desired amount of Italian dressing over the mixture. Stir until everything is evenly coated.
  6. If you’re using it, add the Salad Supreme seasoning. Adjust the taste with salt and pepper if needed.
  7. Cover the bowl and refrigerate for at least 3 hours to meld the flavors.
  8. Before serving, give it a gentle stir and enjoy!

Notes

Best served chilled. Can be stored in the refrigerator for up to 3 days.
