A vibrant pasta salad filled with fresh vegetables and savory toppings, perfect for any occasion.
Ingredients
- 1 lb. rotini (or your favorite pasta)
- 1-2 cucumbers, diced
- 2 tomatoes, diced
- 2 stalks celery, chopped
- 2 bell peppers, chopped (any color works)
- 1 bunch of green onions, finely chopped
- 2 small cans of sliced olives
- 1/2 cup pepperoni, sliced in half
- 1 cup cubed mozzarella or cheddar cheese
- 1/2 cup grated Parmesan cheese
- 12-16 oz. Italian dressing
- 2-3 Tbsp. Salad Supreme (optional for extra flavor)
Instructions
- Start by cutting the vegetables into bite-sized pieces.
- Cook the pasta according to the package instructions. Once done, rinse it under cold water and drain well.
- In a large mixing bowl, combine the cooked pasta with the chopped vegetables.
- Add the olives, pepperoni, and cubed cheese to the bowl. Sprinkle in the grated Parmesan.
- Pour your desired amount of Italian dressing over the mixture. Stir until everything is evenly coated.
- If you’re using it, add the Salad Supreme seasoning. Adjust the taste with salt and pepper if needed.
- Cover the bowl and refrigerate for at least 3 hours to meld the flavors.
- Before serving, give it a gentle stir and enjoy!

Best served chilled. Can be stored in the refrigerator for up to 3 days.
