Description

A light and satisfying summer pasta dish highlighting fresh ingredients and bright flavors.


Ingredients

  • 8 oz bow-tie pasta
  • 1/2 cup Parmesan cheese, grated
  • 1/4 cup pine nuts
  • 1/2 cup fresh basil, chopped
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Bring a pot of salted water to a boil and cook the bow-tie pasta according to package instructions. Drain and set aside in a large bowl.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Stir in the juice and zest of the lemon.
  5. Toss in the cooked pasta, pine nuts, and chopped basil.
  6. Mix thoroughly and season with salt and pepper to taste.
  7. Serve hot, topped generously with grated Parmesan cheese.

Notes

For a vegan version, substitute butter with olive oil and Parmesan with nutritional yeast. Store leftovers in an airtight container in the refrigerator for up to three days.
