A light and satisfying summer pasta dish highlighting fresh ingredients and bright flavors.
Ingredients
- 8 oz bow-tie pasta
- 1/2 cup Parmesan cheese, grated
- 1/4 cup pine nuts
- 1/2 cup fresh basil, chopped
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 2 tbsp butter
- Salt, to taste
- Pepper, to taste
Instructions
- Bring a pot of salted water to a boil and cook the bow-tie pasta according to package instructions. Drain and set aside in a large bowl.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the juice and zest of the lemon.
- Toss in the cooked pasta, pine nuts, and chopped basil.
- Mix thoroughly and season with salt and pepper to taste.
- Serve hot, topped generously with grated Parmesan cheese.
Notes
For a vegan version, substitute butter with olive oil and Parmesan with nutritional yeast. Store leftovers in an airtight container in the refrigerator for up to three days.
