Ingredients

  • 2 Victorian sponge cake layers
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 cup fresh strawberries, sliced
  • 1/4 cup sugar (for macerating strawberries)
  • Additional strawberries for topping


Instructions

  1. Preheat the oven and prepare your Victorian sponge cake according to your recipe. Allow the layers to cool completely.
  2. Macerate the strawberries: In a mixing bowl, combine the fresh strawberries with sugar and let them sit for at least 30 minutes.
  3. Whip the cream: In another bowl, whip the mascarpone cheese and heavy cream together until soft peaks form.
  4. Layer the cake: Place one sponge cake layer on a serving plate, spread a generous layer of mascarpone whipped cream, and top it with a thick layer of the macerated strawberries.
  5. Repeat the process: Add the second sponge cake layer on top and repeat with more whipped cream and strawberries.
  6. Finish and chill: Top the cake with the remaining mascarpone whipped cream and add additional strawberries for decoration. Chill in the refrigerator before serving.
