Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 cups fresh strawberries, hulled and sliced
  • 1 cup strawberry simple syrup
  • 2 cups heavy cream
  • ¼ cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Pour in the milk and vanilla extract, mixing until well combined.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  5. Divide the cake batter evenly between the two prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool for 10 minutes in the pans, then transfer them to wire racks to cool completely.
  8. Whip together the heavy cream and powdered sugar until soft peaks form.
  9. Place one cake layer on a serving platter. Brush with strawberry simple syrup. Spread a layer of whipped cream atop and add sliced strawberries.
  10. Carefully place the second cake layer on top, repeating the process: brush with syrup, add whipped cream, and top with strawberries.
  11. Optionally, decorate the cake with additional whipped cream and fresh strawberries on top.
  12. Slice, serve chilled, and enjoy!

Notes

Use fresh strawberries for the best flavor. Don’t overmix the batter to avoid a tough cake. You can bake the cakes a day in advance.
