A delightful dessert capturing the essence of summer with layers of fluffy vanilla cake, fresh strawberries, and luscious whipped cream.
Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter (room temperature)
- 1/4 cup vegetable oil
- 1 1/2 cups granulated sugar
- 4 large eggs (room temperature)
- 1 tbsp pure vanilla extract
- 1 1/4 cup buttermilk
- 3 cups sliced strawberries
- 2 tbsp strawberry preserves or strawberry jam
- 3/4 cup cream cheese (room temperature)
- 2/3 cup powdered sugar (divided)
- 1 1/2 cups heavy whipping cream
- 2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cream the butter and sugar in a separate bowl until light and fluffy.
- Beat in the eggs one at a time; mix in vanilla extract.
- Gradually add the dry ingredients to the wet mix, alternating with buttermilk.
- Divide the batter evenly between two greased cake pans.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow cakes to cool completely in the pans.
- Once cool, carefully remove cakes from pans.
- Create layers by spreading cream cheese frosting on top of one cake, followed by sliced strawberries and whipped cream.
- Place the second cake on top and repeat the process.
- Finish with whipped cream and strawberries on top.
Notes
Store leftovers covered in the refrigerator for up to 3 days or freeze for longer storage.
