Description

A delightful twist on the classic dessert with light, fluffy cake, sweet strawberries, and luscious whipped cream.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 large eggs
  • 2 cups fresh strawberries, sliced
  • 1 cup strawberry jam
  • 2 cups whipped cream (stabilized if desired)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, mixing to combine.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry mixture to the wet, alternating with the milk. Mix until just combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Once cooled, slice each cake in half horizontally.
  11. Spread a layer of strawberry jam on the bottom half of one cake, then top with sliced strawberries.
  12. Spread whipped cream over the strawberries, then place the second layer on top.
  13. Repeat with the remaining layers, finishing with whipped cream and additional strawberries on top.
  14. Serve chilled and enjoy!

Notes

For best results, use room temperature ingredients and don’t overmix the batter. Chill your cream for fluffy whipped cream.
