Ingredients
- 1 cup fresh strawberries, hulled and sliced
- 1 cup rhubarb, diced
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 pre-made pie crust
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the sliced strawberries, diced rhubarb, granulated sugar, cornstarch, vanilla extract, cinnamon, and salt in a bowl. Mix thoroughly and let it rest for 10 minutes.
- Roll out the pie crust onto a baking sheet lined with parchment paper.
- Spoon the fruit mixture into the center of the crust, leaving a 2-inch border.
- Fold the edges of the crust over the fruit filling, creating pleats as you go.
- Whisk together the egg and milk for the egg wash in a small bowl. Brush this over the crust.
- Bake for 35-40 minutes or until the crust turns golden and the filling is bubbling.
- Allow it to cool slightly before indulging!
