Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup rhubarb, diced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • Pinch of salt


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the sliced strawberries, diced rhubarb, granulated sugar, cornstarch, vanilla extract, cinnamon, and salt in a bowl. Mix thoroughly and let it rest for 10 minutes.
  3. Roll out the pie crust onto a baking sheet lined with parchment paper.
  4. Spoon the fruit mixture into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the fruit filling, creating pleats as you go.
  6. Whisk together the egg and milk for the egg wash in a small bowl. Brush this over the crust.
  7. Bake for 35-40 minutes or until the crust turns golden and the filling is bubbling.
  8. Allow it to cool slightly before indulging!
