Ingredients

  • 2 cups fresh strawberries, sliced
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract in a large mixing bowl. Stir until well mixed, then pour into a greased baking dish.
  3. Mix together the rolled oats, flour, brown sugar, melted butter, salt, and cinnamon until crumbly.
  4. Evenly sprinkle the oat mixture over the fruit filling.
  5. Bake for 40-45 minutes, or until the topping is golden brown and the filling bubbles up.
  6. Allow it to cool for a few minutes before serving.

Notes
