A nostalgic dessert combining ripe strawberries and tangy rhubarb, baked to perfection with a crispy topping.
Ingredients
- 2 cups fresh strawberries, sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, melted
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the strawberries, rhubarb, granulated sugar, cornstarch, and vanilla extract in a large mixing bowl. Stir until well mixed, then pour into a greased baking dish.
- Mix together the rolled oats, flour, brown sugar, melted butter, salt, and cinnamon until crumbly.
- Evenly sprinkle the oat mixture over the fruit filling.
- Bake for 40-45 minutes, or until the topping is golden brown and the filling bubbles up.
- Allow it to cool for a few minutes before serving.
Notes
Serve warm with vanilla ice cream or whipped cream. For extra flavor, add a splash of lemon juice to the fruit mixture.
