A delectable dessert blending sweet strawberries and tart rhubarb, perfect for summer gatherings.
Ingredients
- 2 cups strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, softened
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the filling: In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, and ground cinnamon.
- Pour the fruit mixture into a greased baking dish.
- Prepare the topping: In another bowl, mix rolled oats, flour, brown sugar, and softened butter until crumbly.
- Sprinkle the topping over the fruit mixture evenly.
- Bake for 30-35 minutes or until the topping is golden brown and the fruit is bubbly.
- Serve warm, optionally with a scoop of ice cream or a dollop of whipped cream.
Notes
For an extra crunch, sprinkle chopped nuts on top before serving. Store leftovers in the fridge for up to 3 days.
