Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups fresh mango, peeled and diced
  • 1/4 cup honey or maple syrup (optional)
  • 1 cup coconut water or fruit juice (e.g., orange or pineapple)


Instructions

  1. Blend the fruits: In a blender, combine the strawberries, mango, honey or maple syrup (if using), and coconut water or juice. Blend until you achieve a smooth mixture.
  2. Mold the mixture: Carefully pour the blended fruit mixture into popsicle molds, filling them about three-quarters full to allow for expansion while freezing.
  3. Insert sticks: Place the popsicle sticks in the molds and ensure they’re centered.
  4. Freeze: Place molds in the freezer for at least 240 minutes or until completely solid.
  5. Release and enjoy: To remove the popsicles, run the molds under warm water for a few seconds. Then, gently pull them out. Enjoy your refreshing treat!

Notes

Use ripe fruits for the best flavor. You can also experiment with adding yogurt for creaminess or citrus zest for extra zing.
