  • 1 cup whole milk
  • 4 large eggs

  • 1/2 teaspoon salt
  • 1 cup pureed fresh strawberries
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract (for frosting)
  • Fresh strawberries for decoration


Instructions

  1. Preheat your Oven: Preheat to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the Dry Ingredients: Whisk together flour, baking powder, and salt in a bowl. Set aside.
  3. Cream the Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add Eggs and Vanilla: Mix in the eggs one at a time, followed by the vanilla extract.
  5. Combine and Mix: Gradually add the dry ingredients to the wet mixture, alternating with the whole milk until well blended. Stir in the pureed strawberries.
  6. Pour into Pans: Divide the batter evenly between the prepared cake pans.
  7. Bake: Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool: Allow layers to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Make the Frosting: In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, then beat in heavy cream and vanilla until smooth and fluffy.
  10. Assemble the Cake: Once the layers are cool, place the first layer on a serving plate, spread a layer of frosting and topping with a few strawberry slices. Repeat with the second layer.
  11. Frost the Outside: Frost the top and sides of the entire cake. Decorate with fresh strawberries on top.
  12. Chill: Refrigerate for at least 30 minutes before slicing to allow the frosting to set.

Notes

For a lighter option, feel free to substitute half the butter with applesauce. Use room temperature ingredients for the best texture.
