Ingredients
- 1 cup unsalted butter, softened
- 1 cup cream cheese, at room temperature
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 cup fresh strawberries, diced (or freeze-dried for a twist!)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and cream cheese until smooth.
- Add the granulated sugar and powdered sugar, mixing well.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Whisk together the flour, baking powder, and a pinch of salt in a separate bowl.
- Slowly incorporate the dry ingredients into the wet mixture until combined. Do not overmix.
- Fold in the diced strawberries gently.
- Drop spoonfuls of the cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden. Let them cool on the sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container. They can be refrigerated for up to a week or frozen for up to three months.
