Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup cream cheese, at room temperature
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup fresh strawberries, diced (or freeze-dried for a twist!)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and cream cheese until smooth.
  3. Add the granulated sugar and powdered sugar, mixing well.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Whisk together the flour, baking powder, and a pinch of salt in a separate bowl.
  6. Slowly incorporate the dry ingredients into the wet mixture until combined. Do not overmix.
  7. Fold in the diced strawberries gently.
  8. Drop spoonfuls of the cookie dough onto a lined baking sheet, spacing them about 2 inches apart.
  9. Bake for 12-15 minutes, or until the edges are lightly golden. Let them cool on the sheet for a few minutes before transferring to a wire rack.
