Ingredients
- 1 cup long-grain rice
- 1 can diced tomatoes (14.5 ounces)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt to taste
- Olive oil
Instructions
- Heat a tablespoon of olive oil in a saucepan over medium heat.
- Add the chopped onion and garlic, sauté until soft and fragrant, about 2-3 minutes.
- Stir in the rice and cook for an additional 2-3 minutes until the rice starts to toast.
- Mix in the diced tomatoes, broth, chili powder, cumin, and salt. Bring to a boil.
- Reduce the heat to low, cover, and let it simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
