Ingredients

  • 1 cup long-grain rice
  • 1 can diced tomatoes (14.5 ounces)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth

  • 1 teaspoon cumin
  • Salt to taste
  • Olive oil


Instructions

  1. Heat a tablespoon of olive oil in a saucepan over medium heat.
