Description

This creamy lemon chicken is a tender and juicy dish cooked in a slow cooker, featuring a velvety lemon sauce that’s perfect for weeknight dinners or elegant guests.

Ingredients

  • 5 boneless, skinless chicken breasts
  • 6 tablespoons unsalted butter, divided
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 teaspoon Italian seasoning
  • 2 lemons, juiced and zested
  • 2 garlic cloves, minced
  • 1 cup half and half
  • 1 tablespoon cornstarch
  • 1 tablespoon chicken base, optional

Instructions

  1. Sear the chicken: Melt 1 tablespoon of butter in a large cast iron skillet over medium-high heat. Season the chicken breasts with kosher salt, black pepper, and Italian seasoning. Cook for 4-6 minutes per side until golden brown.
  2. Set up the slow cooker: Transfer the seared chicken breasts to your slow cooker. Add the fresh lemon juice, lemon zest, and minced garlic. Scatter the remaining 5 tablespoons of butter in pieces over the top.
  3. Cook low and slow: Cover and cook on low for 4 hours or on high for 2 hours until the chicken reaches 165°F.
  4. Make the cream sauce: In a large measuring cup, whisk together the half and half, cornstarch, and chicken base until smooth. Pour into the slow cooker and stir gently.
  5. Finish cooking: Cook on high for an additional 1 hour to allow the sauce to thicken.
  6. Serve: Spoon the chicken onto plates and drizzle with creamy lemon sauce.

Notes

Searing the chicken adds incredible flavor and keeps it juicy. The dish is best served fresh.
