Ingredients

  • Guacamole: ripe avocados, lime juice, salt, diced tomatoes
  • Mexican Corn Salad: corn, diced bell peppers, onions, cilantro, lime juice, chili powder
  • Refried Beans
  • Pico de Gallo: tomatoes, onions, cilantro, jalapeños, lime juice
  • Grilled Vegetables: zucchini, bell peppers, onions
  • Sour Cream
  • Queso Fresco
  • Chips: tortilla chips for dipping
  • Slaw: cabbage, carrots, lime dressing
  • Tomato Salsa: diced tomatoes, onion, cilantro, lime juice
  • Elote (Mexican Street Corn): corn on the cob, mayonnaise, cheese, lime


Instructions

  1. Mash the ripe avocados in a bowl, mix in lime juice, salt, and diced tomatoes. Adjust seasoning to taste.
  2. Combine in a large bowl corn, diced bell peppers, onions, cilantro, lime juice, and chili powder. Toss to mix well.
  3. Heat canned refried beans in a saucepan over medium heat until warm, stirring occasionally.
  4. Mix in a bowl diced tomatoes, onions, cilantro, jalapeños, and lime juice. Season with salt to taste.
  5. Toss sliced zucchini, bell peppers, and onions with olive oil, salt, and pepper. Grill until tender.

Notes

Feel free to substitute ingredients based on what you have available or your dietary preferences. Many sides can be made a day in advance to allow flavors to meld beautifully.
