Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 cup pineapple, diced and grilled
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime


Instructions

  1. Marinate the shrimp with olive oil, chili powder, garlic powder, salt, and pepper until well coated.
  2. Preheat your grill over medium heat and grill the shrimp for about 2-3 minutes on each side until they turn pink.
  3. Combine the grilled pineapple, red onion, cilantro, and lime juice in a bowl to prepare the salsa.
  4. Warm the tortillas on the grill for a few seconds on each side until soft.
  5. Assemble the tacos with shrimp and top with pineapple salsa.
  6. Serve immediately and enjoy!

Notes
