Delicious shrimp tacos topped with sweet grilled pineapple salsa for a refreshing summer meal.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 cup pineapple, diced and grilled
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
Instructions
- Marinate the shrimp with olive oil, chili powder, garlic powder, salt, and pepper until well coated.
- Preheat your grill over medium heat and grill the shrimp for about 2-3 minutes on each side until they turn pink.
- Combine the grilled pineapple, red onion, cilantro, and lime juice in a bowl to prepare the salsa.
- Warm the tortillas on the grill for a few seconds on each side until soft.
- Assemble the tacos with shrimp and top with pineapple salsa.
- Serve immediately and enjoy!
Notes
Consider adding sliced avocado or jalapeños for extra flavor. For leftovers, store shrimp and salsa separately in airtight containers.
