Ingredients
- 2 tablespoons olive oil
- 4 tablespoons butter
- ½ medium onion, finely diced
- 4 garlic cloves, minced or pressed
- 1 pound large shrimp, peeled and deveined
- Juice of 2 lemons
- ½ cup dry white wine
- Salt and freshly ground black pepper, to taste
- 4 dashes hot sauce, plus more to taste
- 8 ounces angel hair pasta
- ½ cup grated parmesan cheese
- Chopped fresh basil, to taste
- Chopped fresh parsley, to taste
Instructions
- Bring a large pot of salted water to a boil for the pasta.
- Heat the olive oil in a large skillet over medium heat and melt the butter into it.
- Add the finely diced onion and minced garlic. Cook until the onion becomes translucent, about 2 to 3 minutes.
- Add the shrimp to the skillet and cook until they just start to turn pink, about 2 minutes.
- Squeeze in the lemon juice and pour in the white wine. Season with salt, pepper, and hot sauce. Stir and reduce heat to low.
- Drop the angel hair pasta into the boiling water and cook until al dente, usually 2 to 3 minutes.
- Reserve 1 to 2 cups of pasta water, then drain the pasta.
- Remove the skillet from heat, add the cooked pasta to the skillet, and toss with shrimp and sauce, adding reserved pasta water as needed.
- Taste and adjust seasonings; top with parmesan, basil, and parsley. Serve immediately.
Notes
For best results, use fresh lemon juice and a dry, crisp white wine. Avoid sweet wines. Reheat gently to prevent rubbery shrimp.
