Description

A creamy, cheesy shrimp casserole topped with crispy panko breadcrumbs, perfect for any occasion.


Ingredients

  • 2 pounds large shrimp (21-24 count), peeled and deveined
  • 1 tablespoon Old Bay Seasoning
  • 1 tablespoon salt
  • 2/3 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 4 ounces shredded mozzarella cheese
  • 4 ounces shredded medium cheddar cheese
  • 1 tablespoon butter, plus extra for greasing the pan
  • 1/2 cup panko breadcrumbs


Instructions

  1. Preheat your oven to 375°F and butter a casserole dish.
  2. Boil water, adding salt and Old Bay Seasoning, then cook shrimp for 30 seconds and cool.
  3. Combine mayonnaise, garlic powder, black pepper, and shrimp in a bowl.
  4. Add mozzarella and cheddar to the shrimp mix and combine well.
  5. Transfer mixture to the baking dish and spread evenly.
  6. Melt butter and mix with panko breadcrumbs; sprinkle over the shrimp mixture.
  7. Bake for 13-15 minutes until center reaches 145°F, then broil for 1-2 minutes until breadcrumbs are golden.
  8. Let rest for 15 minutes before serving.

Notes

Pairs well with rice, quinoa, or bread. Can be made ahead and refrigerated before baking.
