Description
A creamy, cheesy shrimp casserole topped with crispy panko breadcrumbs, perfect for any occasion.
Ingredients
- 2 pounds large shrimp (21-24 count), peeled and deveined
- 1 tablespoon Old Bay Seasoning
- 1 tablespoon salt
- 2/3 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 4 ounces shredded mozzarella cheese
- 4 ounces shredded medium cheddar cheese
- 1 tablespoon butter, plus extra for greasing the pan
- 1/2 cup panko breadcrumbs
Instructions
- Preheat your oven to 375°F and butter a casserole dish.
- Boil water, adding salt and Old Bay Seasoning, then cook shrimp for 30 seconds and cool.
- Combine mayonnaise, garlic powder, black pepper, and shrimp in a bowl.
- Add mozzarella and cheddar to the shrimp mix and combine well.
- Transfer mixture to the baking dish and spread evenly.
- Melt butter and mix with panko breadcrumbs; sprinkle over the shrimp mixture.
- Bake for 13-15 minutes until center reaches 145°F, then broil for 1-2 minutes until breadcrumbs are golden.
- Let rest for 15 minutes before serving.
Notes
Pairs well with rice, quinoa, or bread. Can be made ahead and refrigerated before baking.
