Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken breasts in a single layer, seasoning generously with salt and pepper on top.
- Cook undisturbed for 5 minutes until golden on the bottom.
- Flip the chicken and pour the chicken broth into the pan around the chicken pieces.
- Cover the skillet with a lid and cook for 7-10 minutes until the internal temperature reaches 165°F.
- Remove the chicken from the pan and shred using two forks or a stand mixer.
- Mix remaining liquid from the pan with the shredded chicken for extra moisture.
