Ingredients

  • 4 boneless skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3/4 cup chicken broth


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken breasts in a single layer, seasoning generously with salt and pepper on top.
  3. Cook undisturbed for 5 minutes until golden on the bottom.
  4. Flip the chicken and pour the chicken broth into the pan around the chicken pieces.
  5. Cover the skillet with a lid and cook for 7-10 minutes until the internal temperature reaches 165°F.
  6. Remove the chicken from the pan and shred using two forks or a stand mixer.
  7. Mix remaining liquid from the pan with the shredded chicken for extra moisture.
