Description

A hearty make-ahead breakfast casserole combining crispy hash browns, savory sausage, fluffy eggs, and melted cheddar cheese, perfect for Christmas morning or feeding a crowd.

Ingredients

  • 2 pounds hot breakfast sausage
  • 1 (30-32 ounce) bag frozen shredded hash browns
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch baking dish with cooking spray.
  2. In a large skillet, cook the breakfast sausage over medium-high heat until fully cooked, about 8-10 minutes. Drain excess fat.
  3. Add frozen hash browns to the skillet and cook until lightly browned, about 5-7 minutes.
  4. Spread the browned hash browns in the bottom of the baking dish.
  5. Layer cooked sausage over the hash browns and sprinkle shredded cheddar cheese on top.
  6. In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder. Pour this mixture over the layered ingredients.
  7. Cover and refrigerate overnight or bake immediately in the preheated oven for 35-40 minutes until set and golden brown.
  8. Let the casserole rest for 5-10 minutes before cutting and serving.
