Ingredients

  • 2 pounds hot breakfast sausage
  • 2 (8-ounce) packages cream cheese, room temperature
  • 1 (30-32 ounce) bag frozen shredded hash browns
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder


Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook the sausage until no longer pink, breaking it into crumbles. Drain off excess fat.
  3. Add cream cheese to the cooked sausage and stir until melted and mixed. Set aside.
  4. In the same skillet, add frozen hash browns and cook over medium-high heat until lightly browned and slightly crispy.
  5. Spread the browned hash browns evenly across the bottom of the baking dish.
  6. Top with the sausage and cream cheese mixture, followed by the shredded cheddar cheese.
  7. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  8. Pour the egg mixture evenly over the layered ingredients in the baking dish.
  9. Bake for 40-50 minutes until the eggs are set and the top is lightly golden. Let it cool for 5 minutes before serving.

Notes

This casserole can be made ahead of time, and it freezes well. Optionally, use turkey sausage for a leaner option.
