Ingredients

  • 4 salmon fillets
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño pepper, minced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon chipotle powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl to create the mango salsa.
  3. Mix olive oil, chipotle powder, salt, and pepper in a separate bowl to form a wet rub.
  4. Place salmon fillets on aluminum foil and brush the chipotle mixture over the top of each fillet.
  5. Fold the foil to create a packet around the salmon.
  6. Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
  7. Serve the salmon hot, topped with mango salsa.

Notes

For a tropical touch, serve over quinoa or alongside coconut rice. Store leftovers in an airtight container in the refrigerator for up to 3 days.
