A vibrant dish featuring succulent salmon and refreshing mango salsa, perfect for summer gatherings or weeknight dinners.
Ingredients
- 4 salmon fillets
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1 jalapeño pepper, minced
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 teaspoon chipotle powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Combine diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl to create the mango salsa.
- Mix olive oil, chipotle powder, salt, and pepper in a separate bowl to form a wet rub.
- Place salmon fillets on aluminum foil and brush the chipotle mixture over the top of each fillet.
- Fold the foil to create a packet around the salmon.
- Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
- Serve the salmon hot, topped with mango salsa.
Notes
For a tropical touch, serve over quinoa or alongside coconut rice. Store leftovers in an airtight container in the refrigerator for up to 3 days.
