Ingredients
- 1 lb fresh salmon, cooked and flaked
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 1/4 cup fresh parsley, chopped
- 1 egg, beaten
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 avocado
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, green onions, parsley, beaten egg, garlic powder, salt, and pepper.
- Form the mixture into small balls, about the size of a golf ball, and place them on a parchment-lined baking sheet.
- Bake in the preheated oven for 15-20 minutes or until they are golden brown and cooked through.
- To prepare the creamy avocado sauce, blend the avocado, Greek yogurt, lime juice, and salt until smooth and creamy.
- Serve the salmon balls warm and dip them in the creamy avocado sauce.
Notes
Substitute canned salmon for convenience. Use gluten-free breadcrumbs for a gluten-free version.
