Homemade Rotisserie Chicken

Learn how to make your own flavorful, juicy rotisserie chicken at home using simple ingredients and methods.


Ingredients

  • 1 small whole chicken (about 3.5 to 4 pounds) with skin intact
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt (more or less to taste)
  • 1/2 teaspoon black pepper (more or less to taste)


Instructions

  1. In a small bowl, combine the paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix thoroughly and set aside.
  2. Remove the chicken from its packaging and check that the cavity is empty. Remove any giblets if present.
  3. Pat the entire chicken dry with paper towels.
  4. Rub the outside of the chicken all over with olive oil.
  5. Sprinkle the seasoning mixture generously over the entire chicken.
  6. Gently fold the wing tips behind the chicken’s back and tie the legs together with kitchen twine.
  7. To cook on a rotisserie, center the chicken on a spit and cook at medium heat for 60 to 80 minutes until it reaches 165°F.
  8. For oven roasting, preheat to 450°F, roast for 12 minutes, then lower to 350°F for 60 to 70 minutes.
  9. Allow the chicken to rest for 15 minutes before carving.

Notes

You can customize seasonings with herbs or different flavors. Save the bones for homemade chicken stock.
