A simple pasta dish combining tender rotisserie chicken with a fragrant garlic herb sauce, perfect for busy weeknights.
Ingredients
- 16 ounces penne pasta
- 2-3 cups rotisserie chicken, shredded or chopped
- ½ cup extra-virgin olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 teaspoon salt
- ¼ teaspoon red pepper flakes
- 2 tablespoons Italian seasoning
- ⅓ cup Parmesan cheese, grated
Instructions
- Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the penne and cook according to package directions, stirring occasionally. About 2 minutes before the pasta is fully cooked, add the shredded rotisserie chicken to the pasta water. Drain the pasta and chicken together and return them to the pot.
- Make the garlic butter sauce: In a small saucepan over medium-high heat, add the olive oil, butter, minced garlic, salt, and red pepper flakes. Cook for about 2 minutes until the garlic turns golden. If using Italian seasoning, add it now.
- Combine everything: Pour the garlic sauce over the drained pasta and chicken. Add the Parmesan cheese and toss until evenly coated.
Notes
For added flavor, garnish with fresh herbs or extra Parmesan. Consider serving with a salad or crusty bread.
