Buffalo Chicken Quesadillas

Description

Crispy, melty quesadillas filled with spicy buffalo chicken, gooey cheese, and wrapped in a golden tortilla. Ready in just 15 minutes!


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1/3 cup buffalo wing sauce
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter, divided
  • 2 green onions, sliced
  • 1/4 cup ranch dressing or blue cheese dressing
  • Optional: diced celery for extra crunch


Instructions

  1. Place the shredded rotisserie chicken in a medium bowl and toss with buffalo wing sauce until evenly coated.
  2. Heat a large skillet over medium heat and add 1/2 tablespoon of butter.
  3. Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over it.
  4. Spread half of the buffalo chicken mixture evenly over the cheese layer.
  5. Sprinkle another 1/2 cup of cheese over the chicken.
  6. Place a second tortilla on top and press down gently with a spatula.
  7. Cook for 2 to 3 minutes until the bottom is golden brown, then carefully flip and cook the other side for another 2 to 3 minutes.
  8. Transfer to a cutting board, let rest for 1 minute, then cut into wedges.
  9. Repeat the process with remaining ingredients.
  10. Serve immediately with dressing and garnish with sliced green onions.

Notes

For a milder version, reduce the amount of buffalo sauce. Store leftovers in the fridge for up to 3 days.
