Description
Crispy, melty quesadillas filled with spicy buffalo chicken, gooey cheese, and wrapped in a golden tortilla. Ready in just 15 minutes!
Ingredients
- 2 cups shredded rotisserie chicken
- 1/3 cup buffalo wing sauce
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 2 tablespoons butter, divided
- 2 green onions, sliced
- 1/4 cup ranch dressing or blue cheese dressing
- Optional: diced celery for extra crunch
Instructions
- Place the shredded rotisserie chicken in a medium bowl and toss with buffalo wing sauce until evenly coated.
- Heat a large skillet over medium heat and add 1/2 tablespoon of butter.
- Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheese over it.
- Spread half of the buffalo chicken mixture evenly over the cheese layer.
- Sprinkle another 1/2 cup of cheese over the chicken.
- Place a second tortilla on top and press down gently with a spatula.
- Cook for 2 to 3 minutes until the bottom is golden brown, then carefully flip and cook the other side for another 2 to 3 minutes.
- Transfer to a cutting board, let rest for 1 minute, then cut into wedges.
- Repeat the process with remaining ingredients.
- Serve immediately with dressing and garnish with sliced green onions.
Notes
For a milder version, reduce the amount of buffalo sauce. Store leftovers in the fridge for up to 3 days.
