Ingredients
- 1 pound fresh asparagus
- 2 tablespoons extra virgin olive oil
- 1 garlic clove (minced or ¼ teaspoon garlic powder)
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2-3 tablespoons grated Parmesan cheese
Instructions
- Preheat your oven to 425°F (220°C).
- Trim the woody ends from the asparagus.
- In a bowl, drizzle olive oil over the asparagus and toss to coat evenly.
- Sprinkle with minced garlic, salt, and pepper, then toss again.
- Spread the asparagus in a single layer on a baking sheet.
- Bake for 6-8 minutes until tender and slightly crispy.
- Remove from oven and sprinkle with grated Parmesan cheese. Serve warm.
Notes
To store leftover roasted asparagus, place in an airtight container and refrigerate for up to 3 days. For longer storage, blanch and freeze.
