A simple yet flavorful side dish that elevates any meal with roasted asparagus, Parmesan, and a touch of lemon.
Ingredients
- 500 g asparagus, trimmed
- 2 tbsp extra virgin olive oil
- 50 g grated Parmesan cheese
- 1 lemon (zest + wedges)
- 1 garlic clove, minced
- Salt to taste
- Freshly ground black pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Preheat your oven to 220°C (425°F).
- Arrange the trimmed asparagus in a single layer on a baking sheet.
- In a small bowl, whisk together the olive oil, minced garlic, a pinch of salt, and black pepper.
- Drizzle this mixture over the asparagus, tossing to coat every stalk evenly.
- Roast in the preheated oven for about 10–12 minutes until the asparagus is tender and lightly charred at the tips.
- Remove the tray from the oven and sprinkle grated Parmesan over the hot asparagus.
- Put it back in the oven for 1–2 minutes until the cheese melts and takes on a golden hue.
- Zest the lemon over the asparagus and squeeze in some lemon juice to taste. Add red pepper flakes for a little kick if you like.
- Serve hot with lemon wedges on the side.
Notes
Feel free to substitute any hard cheese for Parmesan if desired or use nutritional yeast for a vegan option.
