Description

A simple yet flavorful side dish that elevates any meal with roasted asparagus, Parmesan, and a touch of lemon.


Ingredients

  • 500 g asparagus, trimmed
  • 2 tbsp extra virgin olive oil
  • 50 g grated Parmesan cheese
  • 1 lemon (zest + wedges)
  • 1 garlic clove, minced
  • Salt to taste
  • Freshly ground black pepper to taste
  • Pinch of red pepper flakes (optional)


Instructions

  1. Preheat your oven to 220°C (425°F).
  2. Arrange the trimmed asparagus in a single layer on a baking sheet.
  3. In a small bowl, whisk together the olive oil, minced garlic, a pinch of salt, and black pepper.
  4. Drizzle this mixture over the asparagus, tossing to coat every stalk evenly.
  5. Roast in the preheated oven for about 10–12 minutes until the asparagus is tender and lightly charred at the tips.
  6. Remove the tray from the oven and sprinkle grated Parmesan over the hot asparagus.
  7. Put it back in the oven for 1–2 minutes until the cheese melts and takes on a golden hue.
  8. Zest the lemon over the asparagus and squeeze in some lemon juice to taste. Add red pepper flakes for a little kick if you like.
  9. Serve hot with lemon wedges on the side.

Notes

Feel free to substitute any hard cheese for Parmesan if desired or use nutritional yeast for a vegan option.
