Ingredients
- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chopped rhubarb, granulated sugar, cornstarch, and vanilla extract in a large bowl.
- Pour the rhubarb mixture into a greased baking dish.
- In another bowl, combine the rolled oats, flour, brown sugar, cinnamon, and melted butter. Mix until it resembles crumbs.
- Sprinkle the oat mixture over the rhubarb layer evenly.
- Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb filling is bubbly.
- Serve warm, preferably topped with a scoop of vanilla ice cream.
Notes
