Ingredients

  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, melted


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the chopped rhubarb, granulated sugar, cornstarch, and vanilla extract in a large bowl.
  3. Pour the rhubarb mixture into a greased baking dish.
  4. In another bowl, combine the rolled oats, flour, brown sugar, cinnamon, and melted butter. Mix until it resembles crumbs.
  5. Sprinkle the oat mixture over the rhubarb layer evenly.
  6. Bake for 30-35 minutes, or until the topping is golden brown and the rhubarb filling is bubbly.
