A delightful and refreshing raspberry peach popsicle recipe, perfect for summer days.
Ingredients
- 1 1/2 cups peaches (fresh or frozen)
- 1/2 banana
- 1/2-3/4 cup orange juice
- 1/8-1/4 tsp vanilla extract
- 1 Tbsp honey or agave (or more, to taste)
- 2 cups raspberries (fresh or frozen)
- 2-3 Tbsp honey or agave (or, to taste)
- Juice of 1/2 lemon
- 1/2 cup water
Instructions
- Blend the peach mixture: In a blender, combine peaches, banana, honey/agave, orange juice, and vanilla extract. Puree until smooth. Taste and adjust sweetness if desired. Pour this peach puree into a measuring cup for easy pouring.
- Create the raspberry mixture: To the same blender, add raspberries, lemon juice, honey/agave, and water. Puree until smooth. Strain this mixture through a fine-mesh sieve to remove the seeds.
- Layer the mixtures: Alternate pouring the raspberry and peach mixtures into your popsicle molds.
- Freeze: Carefully cover the molds and insert popsicle sticks. Freeze for at least 240 minutes or until completely solid.
- Unmold the popsicles: To release, run each popsicle mold under cold water for a few seconds, then gently wiggle the sticks to loosen.
- Enjoy and store: Relish your delicious popsicles right away or store leftovers in an airtight bag in the freezer for up to one month.
