Raspberry Peach Popsicles

Description

Refreshing raspberry peach popsicles bursting with vibrant flavors, perfect for cooling off on hot summer days.


Ingredients

  • 1 1/2 cups peaches, pitted and chopped
  • 1/2 ripe banana
  • 1/2-3/4 cup orange juice
  • 1/8-1/4 tsp vanilla extract
  • 1 Tbsp honey or agave (as needed)
  • 2 cups raspberries
  • 2-3 Tbsp honey or agave (to taste)
  • Juice of 1/2 lemon
  • 1/2 cup water


Instructions

  1. Blend peach mixture: In a blender, combine the peaches, banana, 1 tablespoon of honey or agave, orange juice, and 1/8 teaspoon of vanilla extract. Blend until completely smooth. Taste and adjust sweetness if needed.
  2. Blend raspberry mixture: Without rinsing the blender, add the raspberries, lemon juice, 2 tablespoons of honey or agave, and the water. Blend until smooth. Strain the mixture through a fine mesh sieve to remove seeds.
  3. Layer the mixtures: Carefully alternate pouring the raspberry and peach mixtures into the popsicle molds.
  4. Freeze: Cover the molds with their lids and insert popsicle sticks. Freeze for at least 240 minutes or until completely solid.
  5. Unmold & enjoy: To release the popsicles, run cold water over the outside of the molds and gently jiggle the sticks to loosen them.

Notes

Store leftovers in an airtight freezer bag for up to a month. Can substitute frozen peaches or raspberries if fresh ones aren’t available.
