Description

A tender, creamy ranch chicken dish that’s perfect for busy weeknights, made effortlessly in a slow cooker.

Ingredients

  • 4 boneless, skinless chicken breasts (or chicken thighs)
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup chicken broth (low-sodium)
  • 1/2 cup sour cream (or cream cheese)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for searing, optional)
  • 1 cup shredded cheddar cheese (for topping, optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Prepare the chicken (optional): Sear chicken breasts in olive oil for 2-3 minutes per side until golden brown.
  2. Mix the sauce: In a slow cooker, combine the cream of chicken soup, ranch seasoning, chicken broth, garlic powder, onion powder, and black pepper. Stir until well blended.
  3. Add the chicken: Place the chicken breasts in the slow cooker and spoon some sauce over them.
  4. Cook low and slow: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken reaches 165°F.
  5. Shred and enrich: Shred the chicken in the slow cooker and stir in the sour cream.
  6. Finish and serve: Top with shredded cheddar cheese and parsley before serving.

Notes

For a lighter option, serve in tortillas with veggies or over rice for a complete meal.
