Ingredients
- 1 lb jumbo shrimp, peeled and deveined
- 1 cup buttermilk
- ¾ cup cornstarch
- 1 cup neutral oil for frying
- ¾ teaspoon salt
- ¾ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 green onion, finely chopped for garnish (optional)
- ½ cup Japanese mayonnaise/Kewpie mayo
- ¼ cup sweet Thai chili sauce
- 2 tablespoons sriracha
Instructions
- Tenderize the shrimp in buttermilk for 10 minutes.
- Mix together Japanese mayo, sweet chili sauce, and sriracha in a bowl.
- Combine cornstarch, salt, garlic powder, and black pepper in a shallow bowl.
- Dredge shrimp in the cornstarch mixture.
- Heat oil in a skillet to 350°F.
- Fry shrimp in small batches for about 1.5 minutes per side until golden brown.
- Drain excess oil on a wire rack.
- Toss crispy shrimp with the sauce and garnish with green onions.
Notes
Serve over rice or mixed greens for a balanced meal. For a spicier kick, add more sriracha to the sauce.
